OYSTER

Delicious. Decadent. Divine, and Diminishing: OYSTER is an art installation about quantity and appetite.

OYSTER – An installation of oyster, mussel and scallop shells displaying the decline and current restoration of oyster/shellfish populations in Port Philip Bay and New York City, over decades. Including a pop-up, one-night-only Oyster Bar event, OYSTER combined audience participatory ritual with gastronomic delight.

OYSTER was part of MEL&NYC, commissioned by the NGV and supported by the Victorian Government.

OYSTER was presented at Testing Grounds July-August 2018, and was generously supported by The Nature Conservancy, with support of Seafood Industry Victoria, South Melbourne Market, Aptus Seafood, and GDP Industries.
